What "fresh, never frozen" actually means here

It is a phrase that gets used loosely, so here is the timeline.

Orders close at 10am on Monday and Thursday. We cook that day, from raw ingredients, in our own kitchen at 251 Robert Parker Coffin Road. Meals are portioned, labelled and chilled — not frozen, not blast-frozen, not "flash-frozen for freshness". They go out that afternoon or the next day, and arrive in your fridge within roughly a day of being made. If you collect in Long Grove, it is the same morning.

We do not freeze and we do not ship. That is a deliberate limit on the business rather than an oversight: the moment you have to survive a courier network, freezing becomes the only sensible answer, and the food changes.

How long the meals keep, and how to heat them

Three to five days in the fridge from the day they arrive, and every container carries a best-by date. You can freeze them at home if your week changes — they were not frozen before they reached you, which is the part that matters.

Why we don't freeze

Freezing is not a crime. It is a reasonable answer to a real problem: if you are shipping meals nationwide, they have to survive days in transit, and freezing is how you do that. We simply do not have that problem, because everything we make travels less than an hour.

What freezing costs you is texture and salt. Water in vegetables expands into ice crystals and ruptures the cell walls, which is why a frozen green bean comes back soft and a frozen potato comes back grainy. Sauces separate on thawing and need stabilisers to hold. And because freezing and reheating flatten flavour, frozen meals generally carry more sodium to compensate — which is exactly the wrong direction for anyone watching their blood pressure.

Cooking twice a week for people who live nearby lets us skip all of that. We can season with acid, herbs and heat instead of salt, use vegetables that still have structure, and finish a sauce the way it should be finished. That is not a marketing position; it is just what you can do when the food does not have to survive a lorry.

The clearest proof of any freshness claim is being able to collect the food on the day it was cooked. Order by 10am on a Monday, Tuesday, Thursday or Friday and you can pick it up at our kitchen — 251 Robert Parker Coffin Road, Long Grove — the same day.

What chef-prepared and scratch-made mean here

Scratch-made means exactly what it sounds like: Chef Tom and his kitchen team cook the food from raw ingredients, using classic French technique, in our own kitchen. Not assembled from components made elsewhere, not reheated from a central commissary, and not finished by a machine. White Oak has been run by Thomas and Lori Leavitt for over twenty years, starting as a catering and personal chef business — the cooking has not changed, only the number of people it goes to.

Questions about freshness

Are the meals ever frozen?

No. They are cooked twice a week and delivered chilled. Nothing is frozen at any point before it reaches you, and we do not ship.

How long do they keep in the fridge?

Three to five days from delivery. Every container has a best-by date.

Can I freeze them myself?

Yes, if your week changes. They were not frozen before they reached you, which is the part that matters.

How do I heat them?

Black PETE containers are microwave-safe: 2–4 minutes on high, rest 3 minutes, then 3 minutes on medium, or gently in a covered pan with a splash of broth. Foil trays go in a 375°F oven for 10–15 minutes with the plastic cover removed — never in the microwave. Anything else, transfer to a plate or dish first.

How soon after cooking do I get them?

Same day or the next. If you collect in Long Grove on a Monday, Tuesday, Thursday or Friday and ordered by 10am, your meals were made that morning.

Do you ship outside Chicago?

No. Shipping would mean freezing, and freezing is the thing we have built the business around not doing.
